Rice with Dendê Béchamel Sauce

Serves 6

4 tablespoons butter

1-1/2 teaspoons vegetable oil

4 tablespoons flour

2 cups milk

Salt and pepper to taste

3 tablespoons dendê palm oil

4 cups hot cooked rice

1. In a small heavy saucepan, melt the butter with the vegetable oil until it foams. Add the flour at once and stir to form a roux. Slowly pour in the milk and whisk, beating vigorously to prevent lumps. Keep whisking for about 5 minutes. Season with salt and pepper. Fold in the palm oil, simmering for 4 minutes.

2. Mix the béchamel with the rice.
